Gingerbread Loaf
Overview
A soft Gingerbread loaf/cake. Strong spice and molasses flavors good with cream cheese icing.
Original recipe for 1 9" square pan
Favorite Old-Fashioned Gingerbread
Ingredients
- ½ cup unsalted butter, softened
- ½ cup white sugar
- 1 large egg
- 1 cup molasses (not blackstrap)
- 2 ½ cups all-purpose flour
- 1 ½ teaspoons baking soda
- 1 teaspoon ground cinnamon
- 1 teaspoon ground ginger
- ½ teaspoon ground cloves
- ½ teaspoon salt
- 1 cup hot water
Instructions
Preheat oven to 350F, Grease and flour pan(s)
- Beat butter in a large bowl with an electric mixer until creamy.
- Add sugar and beat until light and fluffy ~3min.
- Mix in Egg
- Mix in Molasses until smooth.
- Sift dry ingredients together into a bowl, Flour, Baking Soda, Cinnamon, Ginger, Cloves, Salt
- Gradually add dry mix into wet mix a little at a time fully mixing between until all dry mix is fully incorporated and mixture is smooth.
- Pour into prepared pan(s)
- Bake until a toothpick in the center comes out clean, if using a 9" square pan about 30 minutes adjust time for pan size (smaller = less time)
