Honey Corn Bread
Overview
Honey corn bread from the back of 'Indian Head yellow corn meal'
Ingredients
Dry
- 1 Cup Yellow Corn Meal
- 1 Cup AP Flour
- 1/2 Cup Sugar
- 1 tbsp baking powder
- 1 tsp salt
Wet - 1 Cup milk
- 2 large eggs, beaten
- 1/2 stick unsalted butter, melted
- 1/4 tsp vanilla
- 1/4 Cup Honey
Instructions
- Preheat oven to 400F
- In a bowl combine dry ingredients corn meal, flour, sugar, baking powder and salt.
- In another bowl whisk together wet ingredients milk, eggs, melted butter, vanilla, and honey until well blended.
- Combine wet and dry ingredients until just blended.
For Bread (1 platter)
5. Pour batter into 8x8 greased pan.
6. Bake for 20-25 minutes or until golden.
For muffins (makes 12)
5. Pour batter in greased muffin tins, filling to 2/3 full.
6. Bake for 13-17 minutes or until golden.
