Oatmeal Cookies

Overview
Slightly crunchy outside with a chewy interior
Makes ~50 depending on size
Stores well in freezer both before and after baking
Ingredients
- 1 Cup softened butter
- 1 Cup white sugar
- 1 Cup packed brown sugar
- 2 eggs
- 1 tsp vanilla
- 2 Cups AP flour
- 1 tsp baking soda
- 1 tsp salt
- 1.5 tsp cinnamon
- 3 Cups Oats
Instructions
Cookie Dough
- Mix softened butter, sugar and brown sugar until creamy consistency.
- Beat eggs into mixture (1 at a time if doing manually)
- Stir in vanilla
- In a separate bowl combine flour, baking soda, salt and cinnamon. Mix well.
- Mix dry ingredients into wet ingredients until fully combined.
- Add oats and any other mix ins (raisins, carrot, berries, chocolate) and mix until just combined.
- Chill dough for at least an hour prior to baking.
Bake
- Preheat oven to 375F
- Line baking sheet with parchment paper
- Roll cookie dough into walnut sized dough balls
- Lightly press each dough ball onto baking sheet with a fork spaced for at least 1 inch of spread.
- Bake for 8-10 minutes or until golden
- Cool on pan for 5 minutes before transferring to rack.
Variations
Chocolate Chip Pumpkin Spice
Add 1-2 cups of chocolate chips, .5 tsp Cinnamon, and 2 tsp pumpkin spice seasoning
