Oatmeal Cookies

Overview

Slightly crunchy outside with a chewy interior

Makes ~50 depending on size

Stores well in freezer both before and after baking

Ingredients

Instructions

  1. Mix softened butter, sugar and brown sugar until creamy consistency.
  2. Beat eggs into mixture (1 at a time if doing manually)
  3. Stir in vanilla
  4. In a separate bowl combine flour, baking soda, salt and cinnamon. Mix well.
  5. Mix dry ingredients into wet ingredients until fully combined.
  6. Add oats and any other mix ins (raisins, carrot, berries, chocolate) and mix until just combined.
  7. Chill dough for at least an hour prior to baking.

Bake

  1. Preheat oven to 375F
  2. Line baking sheet with parchment paper
  3. Roll cookie dough into walnut sized dough balls
  4. Lightly press each dough ball onto baking sheet with a fork spaced for at least 1 inch of spread.
  5. Bake for 8-10 minutes or until golden
  6. Cool on pan for 5 minutes before transferring to rack.

Variations

Chocolate Chip Pumpkin Spice

Add 1-2 cups of chocolate chips, .5 tsp Cinnamon, and 2 tsp pumpkin spice seasoning
