Potato & Leek Soup

Ingredients
- 3 Leeks
- 1/2 lb Bacon
- 1 Onion
- 1/8 cup butter
- 1 1/2 - 2 lbs Potatoes
- 3 cloves roasted Garlic
- 1 quart Chicken broth
- 1 cup Heavy Cream
Instructions
Food Prep:
- Cut green tops off Leeks
- Cut Leek greens into 1/2 inch strips
- Cut Leek bulbs into thin rings
- Cube Potatoes into 1 inch cubes
- Dice onions
- Cut bacon into 1/2 inch strips
Cooking:
- Fry Bacon and Leek greens until bacon is crispy, Remove greens and bacon from pot and set aside.
- Sautee Leek bulbs onions, roasted garlic in bacon grease (salt lightly) until onions are translucent.
- Add Potatoes, broth, spice to taste minimum salt and pepper. Simmer until potatoes are tender.
- Add butter and blend until smooth.
- Bring to a low heat and stir in Heavy Cream, final seasoning adjustment.
- Serve hot top with bacon and greens mixture.
