Pumpkin Pasta
Overview
Cheesy pumpkin pasta sauce with tubular noodles.
Ingredients
- 16oz pumpkin puree
- Tube pasta, rigatoni, penne ect
- 1/4 cup olive oil
- 1 medium onion diced
- 6 cloves garlic minced
- 1 1/2 tsp red pepper flakes
- 1 cup heavy cream
- 1 large lemons zest
- 1 cup parmesan
Instructions
- Cook pasta until al dente, drain reserving 2 cups pasta water.
- Heat olive oil in large pot on medium, add onion garlic and red pepper flakes, stir until soft.
- Add pumpkin puree and bring back up to temp, stir in heavy cream.
- Add pasta water slowly until sauce reached desired consistency.
- Add cooked pasta to sauce and toss adding pasta water as needed.
- Add lemon zest and parmesan toss to combine.
- Serve topped with more parmesan and red pepper flakes.
