Pumpkin Pasta


Overview

Cheesy pumpkin pasta sauce with tubular noodles.

Ingredients

Instructions

  1. Cook pasta until al dente, drain reserving 2 cups pasta water.
  2. Heat olive oil in large pot on medium, add onion garlic and red pepper flakes, stir until soft.
  3. Add pumpkin puree and bring back up to temp, stir in heavy cream.
  4. Add pasta water slowly until sauce reached desired consistency.
  5. Add cooked pasta to sauce and toss adding pasta water as needed.
  6. Add lemon zest and parmesan toss to combine.
  7. Serve topped with more parmesan and red pepper flakes.
