Sauerkraut


Overview

Sauerkraut is a fermented mixture of vegetables primarily utilizing cabbage.

Step 1: Sterilize Containers
Step 2: Chop cabbage and any add-ins to desired width
Step 3: Weigh cabbage and add-ins, for every 5lbs of mixture add 2.5 Tablespoons of salt
Step 4: Toss salted mixture and leave in bowl covered air/moisture tight
Step 5: Every 30 minutes squeeze salted mixture to tenderize to desired level, and to squeeze out liquid.
Step 6: Transfer to sterilized container and cover with squeezed out liquid and a fermentation weight to weigh down mixture.
Step 7: Set in cool place to ferment mixing daily, 1 - 2 weeks or until desired flavor, move jar to fridge to slow fermentation.

Notes:
Make sure to keep fermentation mixture below water level to avoid dangerous bacteria or molds from forming.
