Simple but tasty Strawberry Rhubarb Pie

Instructions

  1. Cut Rhubarb in advance and toss in a bowl with the Sugar, cover and refrigerate for at least half an hour and up to 12.
  2. Preheat oven to 375F
  3. Add Flour and Strawberries to Rhubarb (and any additional herbs) when ready to assemble, gently fold ingredients until there are no dry parts.
  4. Roll out pie crust for bottom and fit into a deep pie plate, roll out the pie top and set aside.
  5. Fill with the Strawberry Rhubarb mixture then top, cut ventilation holes in top (make a nice pattern)
  6. Refrigerate until oven is preheated (brush crust with eggwash) then bake for 50 minutes rotating halfway through.
