Strawberry Rhubarb Pie
Overview
Simple but tasty Strawberry Rhubarb Pie
Ingredients
- Pie Crust
- 1 lb fresh Rhubarb cut into 1/2" pieces
- 1 lb fresh Strawberries cut into slices
- 1/2 cup AP Flour
- 4 tbsp Sugar
Optional
- Thyme to taste
- Eggwash (1 egg + 1 tbsp water)
Instructions
- Cut Rhubarb in advance and toss in a bowl with the Sugar, cover and refrigerate for at least half an hour and up to 12.
- Preheat oven to 375F
- Add Flour and Strawberries to Rhubarb (and any additional herbs) when ready to assemble, gently fold ingredients until there are no dry parts.
- Roll out pie crust for bottom and fit into a deep pie plate, roll out the pie top and set aside.
- Fill with the Strawberry Rhubarb mixture then top, cut ventilation holes in top (make a nice pattern)
- Refrigerate until oven is preheated (brush crust with eggwash) then bake for 50 minutes rotating halfway through.
