Vegan Chocolate Spice Cookies

Similar to a gingerbread cookie with a hint of cocoa
Ingredients
- 1 1/2 cups plus 1 tablespoon all-purpose flour
- 1 1/4 teaspoons ground ginger
- 1 teaspoon cinnamon
- 1/4 teaspoon ground cloves
- 1/4 teaspoon nutmeg
- 1 tablespoon cocoa powder
- 1/2 cup vegan butter
- 1/2 cup brown sugar
- 1/4 cup molasses
- 1 teaspoon baking soda, dissolved in 1 1/2 teaspoons boiling water
- 1/4 cup sugar
Instructions
- Whisk together the flour, ginger, cinnamon cloves, nutmeg, and cocoa.
- In a separate bowl beat together butter and brown sugar. Add molasses and mix well. Add half of the dry mixture and the baking soda slurry, combine well. Add the remaining dry mixture and combine.
- Chill for 1 hour, preheat oven to 325F
- Form into 1 1/2" balls and roll each ball in sugar, place on baking sheet, bake for 15 minutes.
